Thermo-hygrometric control plays a vital role in the cheese ripening process, creating final products with excellent organoleptic qualities. Madefrigor, a leading company in the field of industrial refrigeration for the dairy sector for 50 years, created Vertical Air, a revolutionary system that allows producers to overcome the limitations of traditional ripening systems.

Grana and Parmesan ripening rooms are often over 8 metres tall: the hot air tends to move upwards while the cold, moist air tends to move downwards. This phenomenon, known as thermal stratification, can lead to a difference of 4 °C and 10% relative humidity between the top and bottom shelves of cheese, negatively affecting the cheese ripening process.

Cheese ripening

Madefrigor’s Vertical Air system is designed to solve the thermal stratification issue using the vertical uprights of the shelving to transport the air. We are able to introduce a slight airflow and ensure constant control over the thermo-hygrometric parameters on each level and section of the shelving using special nozzles. The uprights are perforated above each wheel: for example, with 22 levels, there will be holes on both sides for 44 nozzles, thereby creating regular air circulation on each level to avoid thermal stratification and guarantee a correct ripening process, which is perfectly balanced and equal across all the wheels on every level.
