Madefrigor provides the food sector with advanced industrial refrigeration technology, designing custom solutions to meet specific needs, including cold rooms and refrigerators for hanging meat.

Much like ageing cured meats and ripening cheeses, hanging is essential to ensure that meat retains its juicy taste and tender texture, requiring special refrigeration. Hanging is therefore not feasible in a domestic setting or most food service facilities, as they lack the necessary ageing systems to keep the meat at a temperature of 0 °C–3 °C and a relative humidity of 80%.

Madefrigor designs and builds meat refrigerators and 0/+4 °C storage rooms: these special refrigeration systems are used in various sectors of the agriculture and food industry, providing the perfect thermo-hygrometric conditions to maintain the organoleptic characteristics of meat and reduce product dehydration, which causes weight loss, as much as possible.

The 0/+4 °C storage rooms feature one or more ceiling-mounted cooling units containing a cooling coil, a defrosting system (hot glycol, water, etc.), and axial electric fans. The air is released frontally and recovered at the back of the cooling unit.

Temperature and humidity controls

While they are in operation, the 0/+4 °C storage rooms are controlled by a special electronic temperature and humidity probe. The humidity is regulated by varying the glycol inlet temperature in the D/T cooling unit.

-20 °C frozen storage rooms

Madefrigor also builds -20 °C frozen storage rooms. The refrigerant in these frozen storage rooms is typically CO2 or ammonia, with an evaporation temperature between -30 °C and -35 °C, to obtain an ambient temperature of -20 °C/-25 °C.

Meat hanging rooms

Madefrigor’s hanging rooms are equipped with a static ventilation system to maintain a high level of humidity. An internal probe constantly monitors the relative humidity and pH.
